These high-protein oatmeal breakfast cookies are a game-changer!

Now that school is back up and running, sometimes we have mornings where we need a quick breakfast.

These cookies are a healthy option for both adults and kids as they are well-balanced, and each cookie has 14g of protein which is more than you can get from 2 eggs!

AND — I won’t be telling you a story before you get to the recipe. ENJOY

Ingredients:

  • 3 cups of oats

  • 1 tsp cinnamon

  • 1 tsp vanilla

  • 1/4 cup syrup (we use a stevia-sweetened syrup to keep it low in sugar)

  • 3 tbsp flaxseed

  • 3 tbsp chia

  • 1 cup banana (about 2 medium sized bananas)

  • 1 cup nut butter

  • 2 scoops protein powder (we use Garden of Life Sport Certified Grass Fed Whey Vanilla)

Directions

  1. Preheat oven to 325 degrees

  2. Line a cookie sheet with parchment paper

  3. Mix everything in a big bowl

  4. Shape 12 cookies and place on cookie sheet

  5. Bake for 15 minutes

  6. Enjoy!

  7. Store in an airtight container

Optional add-ins/substitutes.

  • 1/4 cup of chocolate chips or raisins

  • substitute banana for pumpkin puree or applesauce

  • use vegan protein powder instead of why

  • use real maple syrup (will have more sugar/carbs)
